# Ingredients
1. 2 tablespoons olive oil
2. 1 onion, chopped
3. 3 cloves garlic, minced
4. 3 carrots, peeled and chopped
5. 2 celery stalks, chopped
6. 2 cups mixed vegetables (e.g., zucchini, bell peppers, potatoes, green beans)
7. 4 cups vegetable broth
8. 1 can diced tomatoes (optional)
9. 1 teaspoon dried thyme
10. Salt and pepper, to taste
11. Fresh herbs, for garnish (optional)
# Instructions
1. Heat oil in a large pot over medium heat.
2. Add onion, garlic, carrots and celery; cook until tender, about 5-7 minutes.
3. Add mixed vegetables, broth, diced tomatoes (if using) and thyme.
4. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
5. Season with salt and pepper to taste.
